Healthy Recipe: Curried Beet & Cabbage Slaw

This slaw has it all — cool and creamy dressing, crunchy cabbage and pumpkin seeds, and the curry powder and raisins are the perfect combination of sweet and savory.  Earthy beets are balanced with juicy orange segments and bright lime juice.  This dish is guaranteed to awaken your taste buds.

 Ingredients:

  1. 1 small purple cabbage, shredded

  2. 3-4 cooked (or canned) beets, sliced or diced - (Try Love Beets)

  3. 1 orange, segmented and chopped

  4. 1/2 cup plain yogurt

  5. 1 tsp curry powder

  6. 1 lime (juice and zest)

  7. 1 tsp of honey

  8. 1 Tbsp raisins

  9. 1 Tbsp toasted pepitas (pumpkin seeds)

  10. 1/2 cup fresh cilantro or parsley

  11. salt + pepper

Directions:

In a bowl, whisk together yogurt, lime juice + zest, curry powder.  On a plate, arrange cabbage, beets, and oranges.  Top with a dollop of curried yogurt.  Sprinkle with raisins, pepitas, and fresh herbs.  Drizzle with a teaspoon of honey, and season with salt and pepper.  Enjoy!

Got leftovers? Hearty cabbage stands up well to creamy dressings.  Toss everything together and you now have a salad to pack for lunch, or use the slaw as a garnish for a veggie burger or taco throughout the rest of the week.
