Healthy family recipe: Sweet and savory roasted carrots with tahini sauce

Try this new take on carrots with dip! Roasting vegetables can bring out their sweet flavor and adding the tahini sauce makes this a sweet and savory dish.

Tahini is a rich, thick condiment made from toasted, ground sesame seeds that has a similar consistency as peanut butter. It is typically used in Middle Eastern dishes like hummus. Tahini contains Omega-3 fatty acids which are beneficial for brain and heart health and is also rich in B vitamins which play an important role in metabolism!

Sweet and savory roasted carrots with tahini sauce

Ingredients:

  1. 12 large carrots, whole and tops removed

  2. 3 tablespoons of tahini

  3. 3 tablespoons of water

  4. 2 tablespoons olive oil

  5. 1 tablespoon maple syrup

  6. Dash of cinnamon

  7. Salt and pepper to taste

  8. juice of a fresh lemon

Directions:

Carrots:

1. Preheat oven to 350 degrees F.

2. Cut the tops off the whole carrots, wash, dry, and place on a lined baking sheet.

3. Drizzle 1 tablespoon of olive oil onto the carrots and stir with your hands to make sure the carrots are evenly coated.

4. Add a dash of cinnamon, black pepper, and a pinch of salt.

5. Bake for 45 minutes or until tender (if desired, may cook for less time for crunchier carrots)

Tahini Sauce:

1. In a small mixing bowl combine tahini, maple syrup, salt, lemon juice, 1 tablespoon of olive oil, and water until thick and creamy.

2. Drizzle sauce on carrots before serving or leave on the side for dipping. Enjoy!

Tip! Look for Tahini that is made from unhulled, whole sesame seeds leaving the nutritional value intact! It may be found in your local grocery store in the international food aisle or the condiment aisle.
