Chef David Ansill will reprise hits from Pif — his early-2000s South Philly French BYOB where Bibou is now — for a one-night pop-up on Feb. 19 at M Restaurant at the Morris House Hotel, 231 S. Eighth St.

Ansill, who has done one-nighters before, led worked in various kitchens since the 2010 closing of Ansill, his last restaurant (where Ela now stands), even hosting marijuana-infused dinners. (Talk about baked goods.)

The menu, cash only and $75 per person plus tax and tip), is coming together but likely will include:

Escargot au Pif (roasted garlic, hazelnuts, pernod)
Warm leeks (truffle vinaigrette, egg mimosa)
Steak tartare (purple mustard, capers, quail egg)

Veal cheeks (tomato, saffron, root vegetables)
Cassoulet (smoked sausage, bacon, duck leg confit)
Whole roasted trout (brown butter, capers, haricots verts)

Plus cheese plate and dessert.

It's open seating, with reservations (215-625-6666) or OpenTable accepted from 5 to 9:15 p.m.

It's BYOB, though M's bar will be open and debuting a new cocktail menu that night.
