Noord's Joncarl Lachman to help run M Restaurant

With Noord chef de cuisine Aila DeVowe running the kitchen, Lachman said the menu would become American, with touches of colonial cooking to reflect the building's 18th-century past.

Chef/restaurateur Joncarl Lachman, riding high with the East Passyunk BYOB Noord and the Pennsport diner The Dutch, is now executive chef and partner in the elegant M Restaurant, on Eighth Street near Locust in Washington Square West, effective Tuesday, Oct. 17.

With Noord chef de cuisine Aila DeVowe running M's kitchen, Lachman said the menu would become American with touches of colonial cooking to reflect the building's 18th-century past.

Noord, with a Northern Euro menu, will remain, as-is.

Lachman said the menu would include three pot pies — "contemporary but with appropriate rusticity," Lachman said — and that uniquely Philly combination of chicken salad and fried oysters. Here is the opening menu (.JPG).

M — whose outdoor garden is popular among party planners — is in the Morris House, across from Pennsylvania Hospital.

Lachman and M owner Gene LeFevre met a few years ago when Lachman leased LeFevre's building that housed Lachman's now-shuttered restaurant Neuf. They quickly hit it off.

"We're history nuts," Lachman said, and the two enjoyed taking trips down memory lane over such long-gone destinations as Knave of Hearts and Astral Plane.

M will continue operating Tuesday to Sunday for dinner, with happy hour fro 4 to 6 p.m. Brunch is planned.

Chef Robin Niemczuk, who had been running M as well as LeFevre's nearby pub Six Feet Under, will continue at Six Feet Under, as will other displaced staffers, LeFevre said.
